Who among us isn’t always scrambling out the door in the morning, hurrying to get to wherever we need to go? In our rush, we often forget the most important meal of the day: breakfast. If you’re anything like us, downing a full on foodie spread first thing in the am is hardly appetizing. But on the other hand, drinking your breakfast (i.e. coffee alone) will more often than not leave you totally unsatisfied, and hopping on the snack train quicker than you can say “cheetos”.
Kristin Cavallari hears you. In her new book ‘Balancing In Heels’, she not only offers sage advice on motherhood, relationships, and making it all work, she has some killer recipes that have left our mouths watering. The best part is that they’re largely allergen-free (read: no gluten, dairy, etc). So whether you love your gluten and eat cheese for every meal (I’ll drink to that) or are just trying to change it up a little bit, look no further than below for her Minty Green Smoothie:
- 1 1/4 cup of Almond Milk
- 1 whole avocado, pitted and pealed
- handful of baby spinach, stems removed
- 1 frozen banana, chopped
- 1 heaping tablespoon of honey
- 1/4 teaspoon of spirulina powder (can be found in most health food or vitamin shops, and of course, on amazon).
- 1/4 tsp of peppermint extract (found in the baking and spice aisle of your grocery store)
Combine all ingredients in a blender until mixture thickens and becomes creamy. Pour into a glass, pop in a straw and enjoy!
